Simply Delicious Egg Salad

Chop eggs in medium bowl using pastry blender or fork. In separate small bowl, mix together all seasoning ingredients. Add seasoning mix and mayonnaise to eggs. Stir in add-ins if desired (eg. minced fresh herbs, chopped celery, pickles, sun-dried tomatoes or bacon bits. Serve on lettuce leaf, use as a sandwich filling or cracker spread.

- 4 eggs, hard cooked, peeled
- 3 tbsp (45 mL) mayonnaise or salad dressing
- Seasoning:
- 2 tsp (10 mL) dried chives
- 1/4 tsp (1 mL) onion powder
- 1/4 tsp (1 mL) celery salt
- 1/4 tsp (1 mL) dry mustard
- to taste paprika
- to taste black pepper
- to taste cayenne pepper
