Normally, I’m one of those people who doesn’t like being late for appointments or showing up late at my kid’s games or even missing deadlines, but life really has been crazy lately and my blog posting just fell behind—sorry!

I met up with my good friend Heather, who is my baking and cooking buddy back from our 4-H Foods Leader days.  She also has two, incredibly cute girls who love helping her in the kitchen. A while ago, Heather had gifted me with some really cute and fun cupcake liners and so we decided to make some chick cupcakes.  These were perfect for Easter, but the cake recipe is awesome and can be used all year long.

Duff Goldman is a TV celebrity cake baker with his own line of bake ware and cake decorating supplies and he is lots of fun!  We used his basic vanilla cake recipe:

Vanilla Cake

  • 3 1/2 cups all-purpose flour
  • 1 1/2 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 1/2 cups butter, softened
  • 2 cups sugar
  • 4 tsp. vanilla
  • 6 eggs
  • 3 tbsp. canola oil
  • 2/3 cup buttermilk

Sift together flour, baking powder, baking soda and salt. Cream butter and sugar for 5-7 minutes until light. Add vanilla and then eggs one at a time, followed by oil and buttermilk. Combine with flour mixture, then pour into cake pans or cupcake tins. Bake at 350 F for 15-18 minutes or until a toothpick comes out clean. Cool completely before icing.

Heather used a royal icing recipe to make beaks and eyeballs for the chicks and a buttercream icing for the feathers.


This is what we ended up with:
