Whisk eggs with cinnamon in a small bowl. Spray a medium non-stick skillet with cooking spray. Preheat to medium. Pour eggs into skillet. As eggs set at the edges, with spatula, gently lift cooked portion to allow uncooked egg to flow underneath. Cook until eggs are almost set, about 5 minutes. Place Brie, raisins and walnuts on half of the omelette. Fold other half over filling. Let stand for 2 minutes to melt the Brie. Cut the omelette in half. Place each half on a warm plate.
