5 (6 inch / 15cm) flour tortillas
1 cup (250 mL) chopped cooked ham
1 cup (250 mL) your favorite shredded cheese
8 eggs, beaten
1/2 cup (125 mL) cream-style corn
1 tsp (5 mL) chili powder
1/2 cup (125 mL) chopped green or red pepper
2 tbsp (30 mL) finely chopped fresh cilantro or parsley

Directions

Spray a 9 inch (23 cm) pie plate with vegetable spray. Place 4 tortillas in pie plate, overlapping and extending 1/2 inch (1 cm) beyond the rim. Place remaining tortilla in the centre. Layer with ham and cheese. Combine eggs, cream-style corn and chili powder; slowly pour over ham mixture. Sprinkle with peppers. Bake at 350 F (180C) from 25 to 30 minutes or until the centre is set. Sprinkle with cilantro. Let stand for 5 to 10 minutes before serving.
