Summer Salad with Berries and Herbs

1/2 cup romaine, chopped
1/2 cup endive, chopped
1/2 cup white navy beans, cooked
1/2 cup small potatoes, cooked
1/2 cup cherry tomatoes, roasted
1/4 cup corn kernels
1 avocado, sliced
1/4 cup olive oil
juice of 1 lemon
2 egg hard-boiled and cut into wedges
1/4 cup fresh herbs, chopped
sliced strawberries, raspberries, or blackberries

Directions

  1. In a large mixing bowl, combine romaine, endive, beans, potatoes, tomatoes, corn, and avocado.
  2. Toss with olive oil and lemon juice. Season with salt and pepper.
  3. Divide salad between two plates. Garnish with eggs and herbs. Serve immediately.
