1 cup 1-inch (2.5 cm) pieces thick cut bacon
1/4 cup olive oil or vegetable oil
3 tbsp white wine vinegar
2 tbsp dijon mustard
1 tbsp minced shallots
salt and pepper, to taste
2 cup packed mixed greens
2 cup packed fresh arugula
1 tbsp finely chopped chives plus extra for garnish
4 egg poached
fresh shaved parmesan (optional)

Directions

1. In a large skillet, over medium high heat, cook bacon about 9 minutes until crisp. Remove with slotted spoon and drain on paper towel.

2. In a small bowl, whisk together oil, vinegar, mustard and shallot. Season with salt and pepper, to taste. Set aside.

3. In a large bowl, gently toss together mixed greens, arugula, bacon, chives and half of the prepared dressing. Place mixture onto 4 plates and top with a poached egg. Drizzle with dressing. Garnish with chives and parmesan cheese, if using.

Tip: Mix it up with different greens or try a smoked ham instead of bacon.
