1. In a large skillet, over medium high heat, cook bacon about 9 minutes until crisp. Remove with slotted spoon and drain on paper towel.
2. In a small bowl, whisk together oil, vinegar, mustard and shallot. Season with salt and pepper, to taste. Set aside.
3. In a large bowl, gently toss together mixed greens, arugula, bacon, chives and half of the prepared dressing. Place mixture onto 4 plates and top with a poached egg. Drizzle with dressing. Garnish with chives and parmesan cheese, if using.
Tip:Â Mix it up with different greens or try a smoked ham instead of bacon.
