In a large bowl, combine flour, sugar, baking powder, salt and cinnamon. Stir in cheese and apple. In another bowl, beat together eggs, milk, butter and vanilla. Pour over dry ingredients and stir just until moistened. Lightly grease a non stick skillet and heat over medium heat. Pour in 1/4 cups (50 mL) batter for each pancake, and spread into a 4 inch (10 cm) round. Cook until bubbles form on surface and underside is golden brown. Turn pancake and brown other side. Repeat to make additional pancakes. Serve warm, with syrup if desired.
