Directions
Preheat oven to 375°F (190°C).
Slice potatoes in half lengthwise; scoop out inside flesh of potatoes with spoon, being careful not to pierce skins.
Combine potato flesh, eggs, sour cream, chives and bacon in medium bowl. Stuff potato skins with egg mixture. Sprinkle cheese over top.
Bake in preheated oven until cheese melts, about 15 minutes.
