3/4 cup granulated sugar, divided

3 cup 2% milk
1/2 tsp vanilla
2 ripe but firm bananas, sliced
2 tbsp butter, softened
6 slices, 1/2 inch (1 cm) thick egg bread

Directions

  1. In a large bowl, combine spice mix and salt. Whisk in 1/2 cup (125 mL) sugar, eggs, milk and vanilla; set aside.
  2. Butter an 11 x 8-inch glass baking dish. Slice bananas and arrange evenly in the bottom of the baking dish. Butter bread slices on both sides and cut into cubes; sprinkle over top of bananas to cover. Pour egg mixture evenly over top and sprinkle with remaining 1/4 cup (50 mL) of sugar.
  3. Bake in preheated 350°F (180°C) oven for about 1 hour or until knife inserted in centre comes out clean and top is golden brown and slightly puffed. Let cool slightly before serving.

Spice Mix

  • 3/4 tsp (4ml) ground cinnamon
  • 1/2 tsp (2 ml) freshly grated nutmeg
  • 1/4 tsp (2 ml) ground cloves

Tip:

  • For an extra touch of sweetness and elegance, serve with a dollop of whipped cream.
