2 egg per person
1 tbsp butter
2 small tortillas per person flour or corn
BASE
1/2 lb crumbled sausage (any flavour)
1 cup cherry tomatoes
1 small red pepper
1 small green pepper
2 stalks green onion
1 tsp ground chili powder
1 tsp ground cumin
1/2 tsp garlic powder or 1 small clove garlic
olive oil, salt, pepper
BEANS
1 cup black beans
1 lime
olive oil, salt, pepper
TOPPINGS
1/2 cup crumbled cotija or feta cheese optional
1 avocado optional
2 tbsp fresh cilantro optional/can also use parsley

Directions

1. Make the Sauce
Sauté the onions and garlic in a little olive oil in a large skillet on medium heat. Add the sausage and cook until crumbly. Add the peppers, then the cumin and chili and then add the diced tomatoes and heat through.

2. Make the Beans
Drain the beans, then add to a frying pan with olive oil. Heat the bean through, smashing some of them with a fork, then add some lime juice, salt and pepper to taste.

3. Fry the tortillas in a little oil, set aside.

4. Fry the eggs in olive oil and dots of butter, salt and pepper.

5. Assemble!
