Directions

1. Make the Sauce 
Sauté the onions and garlic in a little olive oil in a large skillet on medium heat. Add the sausage and cook until crumbly. Add the peppers, then the cumin and chili and then add the diced tomatoes and heat through.

2. Make the Beans
Drain the beans, then add to a frying pan with olive oil. Heat the bean through, smashing some of them with a fork, then add some lime juice, salt and pepper to taste.

3. Fry the tortillas in a little oil, set aside. 

4. Fry the eggs in olive oil and dots of butter, salt and pepper. 

5. Assemble!

  • 1/2 lb crumbled sausage (any flavour)
  • 1 cup cheery tomatoes
  • 1 small red pepper

  • 1-2 tsp ground chili powder
  • 1 tsp ground cumin
  • 1/2 tsp garlic powder or 1 small clove garlic

  • 1/2 cup crumbled cotija or feta cheese optional
  • 1 avocado optional
  • 2 tbsp fresh cilantro optional/can also use parsley
