Directions
Mash eggs with mayonnaise to desired texture. Add lime juice, peppers, radishes, salt and pepper. Spoon egg filling into middle of each tortilla; add lettuce, onion and coriander. Fold lower third of the tortilla over egg mixture and fold the two opposite sides over the centre to form a pocket.

- 1 tsp (5 mL) jalapeno pepper, finely diced
- 2 tbsp (30 mL) radishes, finely diced

- 4 slices red onion, thin
- 4 sprigs coriander, fresh
