3 carrots, peeled and cut into chunks
1/2 head cauliflower, broken up
1 head broccoli, broken up
2 garlic cloves, chopped
2 egg
1/2 tsp onion powder
3/4 tsp salt
1/2 tsp pepper
1 3/4 cup bread crumbs
oil for pan-frying
sweet chili sauce for dipping


  1. In a food processor, combine all of the veggies, garlic and eggs. Blend until everything is a uniform size.

  2. Add in the bread crumbs and pulse to combine.

  3. Once combined, remove into a small bowl and form small nugget sized shapes.

  4. If frying: Heat oil in a pan to 350°F (180°C). Add nuggets and fry until crispy, approximately 5 – 10 minutes, depending on the desired crispiness.

  5. If baking: Place nuggets on parchment paper and bake at 350°F (180°C) flipping halfway through cooking, about 15 minutes.

  6. Serve with sweet chili sauce or any dip of choice.
