4 egg jammy cooked
1 cup roasted sweet potato chunks
1 cup brown rice, steamed
1/2 cup roasted broccoli
1/2 cup roasted cauliflower
1/2 cup baked firm tofu
1/2 avocado, sliced
1/4 cup chickpeas, drained
3 tbsp dressing of choice
2 tbsp mixed nuts or seeds

Directions

  1. Assemble all ingredients in 2 bowls. Dress with a vinaigrette of your choice and top with jammy eggs, nuts and seeds.
