Panera Bread Style Bacon Souffle

1 puff pastry sheet
4 egg large
1/4 cup heavy cream
1/2 cup cheddar cheese
1/2 cup mozzarella (sub in any of your fav cheeses)
1/2 tsp salt
1/4 tsp black pepper
4-6 slices thick cut bacon
1 tsp fresh rosemary, chopped

Directions

  1. Preheat the oven to 400 degrees. Butter 4 ramekins and set aside.
  2. Add the eggs to a bowl and whisk well. Season with salt and pepper. Add heavy cream & cheeses and mix to combine. Set aside
  3. Unroll puff pastry. Cut it into 4 equal sized pieces and place into the prepared puff pastry. Use a fork to prick holes in the bottom of the pastry to prevent the bottoms from rising too much.
  4. Pour the egg mixture & top with thick cut bacon and sprinkle rosemary over top. Fold each corner of the puff pastry down to face the center.
  5. Bake for 30-35 minutes.
