Mini Garden Quiche with Garden Vegetables

12 ready made pie shells
3 egg extra large eggs
1 large mushroom
1 garlic clove
1/2 spring onion
1/2 tsp crushed black pepper
1 tsp onion powder
2 tsp oregano
1/2 tsp salt
3 tbsp milk
3 tbsp chopped red peppers
3/4 cup grated old fort cheddar

Directions

1. Remove the pie shells from the freezer and place them on a baking sheet, defrost for 10 minutes before baking.

2. Heat the oven to 375F.

3. Whisk the eggs, onion powder, black pepper, vegetables and milk together well.

4. Mix in 1/4 cup of cheese.

5. Pour 2 tablespoons of the egg mixture into each cup or until full

6. Sprinkle some cheese and a pinch of oregano on top of the egg mixture in each cup (don’t

skip this step, it’s the magic ingredient!)

7. Bake for 25-30 minutes, until the tops are golden and enjoy hot!

You can also refrigerate these and enjoy them the next day!
