6 egg hard cooked, peeled
1/4 cup chopped celery
2 tbsp mayonnaise
1 tsp fresh lemon juice
1 green onion, thinly sliced
4 small whole wheat flour tortillas
2 tsp dried dill
1 tsp dried parsley
1/2 tsp onion powder
1/2 tsp dry mustard

Directions

1. In a medium bowl, mash eggs with a fork or pastry blender. Add seasonings, celery, mayonnaise to taste, lemon juice and green onion; mix well. Divide egg salad among tortillas. Roll and slice in half. Serve with a variety of vegetable sticks.

Change it Up: Spoon into a pita pocket or serve on toasted whole grain bread lined with lettuce or spinach. For a tasty and quick snack idea, spoon on crackers and sprinkle with paprika.
