I think if I had to choose, my ALL TIME FAVE egg recipe is EGGS BENNY. Truth be told it’s the hollandaise that gets me every time, so I will choose eggs benny, ANY HOUR of the day!
Sometimes breaking the rules can be amazing. Take the egg for example. Normally a staple in most homes. A perfect food whether scrambled, boiled, fried or poached. We all think of eggs for breakfast, or brunch? Sure. Now let’s break the rules with eggs. They don’t have to be just for breakfast. Have you ever put a golden fried egg on your burger, watching the yolk dribble down onto the meat and bun? What about on top of pizza, all nestled in with the cheese and pepper toppings? Egg whites whipped into a Friday night face mask? The possibilities are endless! Let’s cover the basics then get to breaking some rules! ANYTHING GOES!
Let’s start with the basics. Eggs for breakfast.
I love making buckwheat crepes with ham, Parmesan cheese, and a fried egg on top. It’s my go-to breakfast.
Taylor Swift brings up a slightly “rule breaking” point. Double the eggs. Have a crepe made with eggs, then TOPPED with another egg. Amazing. Yes please! Ps that’s a pretty fancy “go-to” breakfast TayTay! We are HERE for it!
Another amazing breakfast fave in our house are M’egg Muffins. I love to take a muffin tin, then fill each cup with different toppings. Some with ham + cheddar, some with diced peppers and feta, or if we want twist it up a little and break some rules, what about using all the leftovers from Tuesday’s taco night? Diced spicy chicken, salsa and black beans! Scatter in the filling, then top each up to the brim with eggs whisked with a little cream, then bake to perfection! The possibilities are endless and when they come out of the oven, they’re these magically puffy egg delights, perfect for a portable snack or lunch!

MASHED POTATO PUFFS!
These have to be one of the easiest and YUMMIEST side dishes you can make! They’re called mashed potato puffs and the name really says it all! Grab the trusty muffin tin again, then fill with a mixture of leftover mashed potatoes, eggs, cheddar, sour cream, chives, bacon and anything else your fridge holds and within 45 mins you have little magical puffs of potato goodness! Here’s where I break the rules. I don’t worry so much about the calories, I give everyone two on their plate but we end up with an empty platter once dinner is finished! PRO TIP: You could EVEN use 2 of these as “buns” and make a mini slider patty for in between! OR, What about EGGS BENNY ON TOP OF THESE instead of english muffins. (I have a BENNY ONE TRACK MIND but come on)!
Whenever we make mashed potatoes in our house, we always make at least 2 extra cups so the next day it’s MASHED POTATO PUFFS TIME!
BREAK THE RULES
What are some other ideas for breaking the rules? Let’s make a list!
- A delicious burger topped with a pan fried egg. Runny, drippy goodness!
- Fried eggs on pizza! Think of the runny yolk as a rich sauce! Skip the traditional tomato sauce, go for a pesto or cream sauce base. YUM!
- Eggs in face masks! Whisk an egg white until stiff peaks form, add a dash of lemon juice and honey and apply with a brush for 5-10 mins then rinse!
- WAFFLE eggs! Whisk your eggs, cream or milk and seasonings, then pour into a spritzed waffle maker! Looks like a waffle, TASTES like an omelette!
- Skip the store bought and make your own EGGY pasta noodles!
- EGG rolls…wonton wrappers filled with breakfast! (coming soon to Cook With Meg)
There are just so many ways to break the rules with eggs, there really ARE no rules! Whisk them, whip them, fry them, poach them. Add a sauce, fill a wonton, top a burger, make a face mask, concoct a cocktail and more! The sky’s the limit when it comes to the humble egg!
