What to make with a Dozen Eggs?

Have you recently purchased a dozen fresh, local eggs from the grocery store? Deciding how best to use those 12 eggs for meals spread out through the week? We figured we would lend a hand and highlight 6 recipes that will use up all those eggs, with a mix of breakfast, lunch, dinner and dessert. Let’s give it a go!

12 Eggs to Start

Eggs 1 & 2: Banana Blueberry Waffles – Egg Farmers of Alberta (eggs.ab.ca)

Here is a wonderful breakfast option, especially if you have kids and want to make a special weekend meal. With fresh fruit mixed in, you’ll be craving for more!

Egg 3: English Muffin Egg Sandwich – Egg Farmers of Alberta

Okay, this recipe isn’t as flash as the waffles, but it is a simple and quick choice for those on the go. A staple option at many fast-food restaurants and an affordable one too.

Eggs 4 & 5: Mediterranean Salad Bowl – Egg Farmers of Alberta (eggs.ab.ca)

With almost reaching the halfway mark in our egg carton, this salad brings a powerful nutrient punch for lunchtime. A great recipe to make if you have a busy day at work and need to stay energized.

Eggs 6, 7 & 8: Easy Pad Thai – Egg Farmers of Alberta (eggs.ab.ca)

A popular food from Thailand, Pad Thai is one recipe where there are many variations to try. The recipe we provided is a straight-forward one, but part of the fun of cooking is trying new things. This works good with pork or seafood and a mix of different vegetables.

Eggs 9 & 10: Chicken Parmesan – Egg Farmers of Alberta (eggs.ab.ca)

Now here’s a perfect comfort food dinner to make with the cold winter weather the prairies most often get. The tomato sauce drizzled over the breaded chicken, topped with mozzarella cheese and baked till golden in the oven = scrumptious!

Eggs 11 & 12: Double Chocolate Brownies – Egg Farmers of Alberta (eggs.ab.ca)

The last two eggs can be used making a worthwhile treat, like these chocolate brownies! Brownies are one of those desserts that everyone will enjoy. Feel free to use whichever brand of chocolate chips (milk, dark, white, Reese’s Pieces, mini chipits, etc).

Well, there you have it, 6 recipes that use up one carton of fresh, local Albertan eggs. Which recipe will you try next?
