Treasure Cookies

Ingredients

1 3/4 cups (425 mL)  all purpose flour
2/3 cup (150 mL)  unsweetened cocoa powder
1/2 tsp (2 mL)  baking powder
1/2 tsp (2 mL)  salt
1 cup (250 mL)  unsalted butter
1 cup (250 mL)  granulated sugar
1/2 cup (125mL)  brown sugar
1 large egg
1 tsp (5 mL)  vanilla extract 
1 1/2 cups (375 mL)  chocolate chips 
1 1/2 cups (375 mL)  dried cherries

Directions

In a medium bowl, whisk flour, cocoa powder, baking powder, and salt together.  In a medium metal bowl, beat softened butter and sugars together. Beat in egg and vanilla extract. Using a wooden spoon, gradually stir in flour mixture until well combined. Fold in chocolate chips and cherries. Cover with plastic wrap and refrigerate for 1 to 2 hours. Preheat oven to 350 F (180° C).

Shape dough into 1 1/2 inch (4 cm) balls and roll into granulated sugar. Place on a greased cookie sheet 3 inches (7.5 cm) apart.

Flatten using the bottom of a glass jar or glass cup. Bake for 13 to 15 minutes. Let cool on a wire rack.
