Sunday Morning Bliss

Ingredients

5 eggs
1 tsp (5 mL) milk
1/2 medium tomato, diced
3 strips bacon, cooked, crumbled
to taste pepper
1 tsp (5 mL) olive oil (optional)
1/2 medium onion, diced
1/4 cup (60 mL) herbed cream cheese

Directions

Beat eggs and milk in a medium bowl. Stir tomato, bacon and pepper into eggs.

Heat oil in a non stick skillet, or spray with cooking spray and set to medium heat; saut€ onion until translucent. Pour egg mixture over onion and cook over medium heat without stirring, lifting edges to allow uncooked egg to flow underneath. Continue cooking until bottom is set and top is almost set.

Scatter small spoonfuls of cream cheese over half of the omelette. Fold other half over to cover cheese and let stand until cheese melts. Cut omelette in half.

Serve with toast and chunky hash brown potatoes
