Sun-Dried Tomato Mayonnaise

Ingredients

2 egg yolks 
1 tsp (5 mL) lemon juice
1 tsp (5 mL) dijon mustard
1 tsp (5 mL) sun-dried tomato pesto
1/4 tsp (1 mL) salt
to taste pepper
1 cup (250 mL) oil

Directions

Beat egg yolks, lemon juice, mustard, pesto, salt and pepper with whisk in medium bowl until well combined. Slowly add cooking oil while beating constantly until mixture is thickened. Chill
 

Makes: 1 1/4 cups (300 mL)

Preparation: 10 minutes
