Soft as Snow Sugar Cookies

Ingredients

3 1/2 cups (875 mL) all purpose flour
1 tsp (5 mL)  baking soda
1 tsp (5 mL)  baking powder 
2 cups (500 mL)  granulated sugar 
1 cup (250 mL)  unsalted butter 
2 large eggs
1 cup (250 mL)  buttermilk 
1 tsp (5 mL)  vanilla extract 

Directions

Preheat oven to 375 F (190° C). * In a large bowl, whisk flour, baking soda, and baking powder together.

In a large metal bowl, beat softened butter and sugar together. Beat in eggs and vanilla. Using a wooden spoon, alternate stirring in flour mixture and buttermilk until well combined. On a lightly greased cookie sheet, drop heaping tablespoons of dough 3 inches (7.5 cm) apart. Bake for 8 to 10 minutes. Sprinkle tops with confectioners sugar and let cool on a wire rack.
