Simply Delicious Egg Salad

Ingredients

4 eggs, hard cooked, peeled
3 tbsp (45 mL) mayonnaise or salad dressing

Seasoning:

2 tsp (10 mL) dried chives
1/4 tsp (1 mL) onion powder
1/4 tsp (1 mL) celery salt
1/4 tsp (1 mL) dry mustard
to taste paprika
to taste black pepper
to taste cayenne pepper

Directions

Chop eggs in medium bowl using pastry blender or fork. In separate small bowl, mix together all seasoning ingredients. Add seasoning mix and mayonnaise to eggs. Stir in add-ins if desired (eg. minced fresh herbs, chopped celery, pickles, sun-dried tomatoes or bacon bits. Serve on lettuce leaf, use as a sandwich filling or cracker spread.

Makes: 1.5 cups (375 mL).
