Pizza Omelette

Ingredients

6 eggs
1/3 cup (75 mL) water
1/2 tsp (2 mL) salt
1/4 tsp (1 mL) oregano, crushed
pinch pepper
1 tbsp (15 mL) butter or margarine
1/4 cup (50 mL) pizza sauce
1/2 cup (125 mL) mozzarella cheese, shredded
sliced red pepper and olives (optional)

Directions

Preheat broiler. In a bowl, mix eggs, water, salt, oregano and pepper with a fork. In a 10 inch (25 cm) omelet pan or skillet with ovenproof handle, heat butter until pan is just hot enough to make a drop of water sizzle. Pour in egg mixture. Eggs should set at edges at once. With a spatula, carefully draw cooked portions at edges toward centre so uncooked egg can flow under. Tilt skillet as necessary to hasten flow of uncooked egg. Slide pan back and forth rapidly over heat to keep mixture in motion and sliding freely. While top is still moist, spread with pizza sauce and sprinkle with cheese. Broil until cheese melts, if desired, or cover skillet and let stand until cheese is melted. With a spatula, slide pizza from pan onto serving plate. Garnish with sliced red pepper and olives, if desired. To serve, cut into wedges.
