Pistachio Lime Cookies

Ingredients
Dough:
2 cups (500 mL) all purpose flour1 cup (250 mL) unsalted butter
1 cup (250 mL) granulated sugar
1 large egg
12 tsp (0 mL) lime peel
1/2 tsp (2 mL) cardamom
1 cup (250 mL) pistachios
Directions
- In a medium bowl, mix flour, cardamom, grated lime peel, and crushed pistachios together.
- In a medium metal bowl, beat softened butter and sugar together.
- Beat in egg.
- Using a wooden spoon, gradually stir in flour mixture.
- Cover with plastic wrap and refrigerate for 1 to 2 hours.
- Preheat oven 375 F (190° C).
- On a lightly floured surface, roll out dough to 1/4 inch (1/2 cm) thick.
- Using cookie cutters cut out desired shapes and place on an ungreased cookie sheet 1 inch (2.5 cm) apart.
- Bake for 8 to 10 minutes.
- Let cool on a wire rack.
Icing:
1 tbsp (15 mL) whole milk2 tbsp (30 mL) unsalted butter
1 cup (250 mL) confectioners sugar
1/4 tsp (1 mL) lime peel
15 to 20 whole pistachios
* In a small bowl, beat softened butter, sugar, milk, and grated lime peel together.
* Ice cookies and place a shelled pistachio in the middle of each cookie.
