Peanut Butter Cookies

Ingredients

3 cups (750 mL)  whole wheat flour
1 tsp (5 mL)  baking powder
2/3 cup (150 mL) unsalted butter
1 cup (250 mL) granulated sugar 
1 cup (250 mL) brown sugar 
2 large eggs
2 cups (500 mL)  natural peanut butter 
1 tsp (5 mL)  vanilla 

Directions

  • Preheat oven to 325 F (170° C)
  • In a medium bowl, mix flour and baking powder together.
  • In a large metal bowl, beat softened butter, sugars, and eggs together until well mixed.
  • Beat in peanut butter and vanilla.
  • Gradually add flour mixture until well blended.
  • Roll dough into 1 inch (2.5 cm) balls and place on a greased cookie sheets leaving at least 1 inch (2.5 cm) between cookies.
  • Using a fork, gently press the balls of dough flat.
  • Bake for 10 to 12 minutes on until cookies turn a golden brown.
  • Let cool on a wire rack.
