Orange Meringue Cookies

Ingredients
3 egg whites1/4 tsp (1 mL) cream of tartar
1/2 cup (125 mL) sugar
11 tbsp (5 mL) orange rind, grated
Directions
Preheat oven to 200 F (100 C). In a large bowl, beat egg whites until foamy; add cream of tartar and beat until soft peaks form. Continue beating and add sugar, one spoonful at a time. Beat until mixture forms stiff, glossy peaks. Fold in orange rind. Drop tablespoons of meringue mixture onto foil-lined baking sheets. Bake 2 hours. Meringues will still be moist. Turn oven off and let meringue cookies dry in oven overnight.Makes 30 cookies

Baking: 2 hours plus drying time
