Monte Cristo Melt

Ingredients

2 eggs
1 tbsp (15 mL) milk
to taste freshly ground pepper
2 slices whole grain bread
1 tsp (5 mL) prepared mustard
1 each thin slice deli turkey and deli ham
1 thin slice swiss cheese
cooking spray

Directions

Whisk together eggs, milk and pepper; set aside. Spread one side of bread slice with mustard. Place slices of turkey and ham on bread slice. Top with cheese and remaining bread slice. Soak sandwich in egg mixture for 2 minutes on each side or until egg mixture is absorbed. Spray a small non stick skillet with cooking spray. Heat skillet over medium heat. Place sandwich in skillet and lower heat to medium low. Cook for 2 minutes on each side or until bread is golden brown and cheese melts.
