Mediterranean Frittata

Ingredients
3 eggs2 tbsp (30 mL) feta cheese, crumbled
1 tbsp (15 mL) sun dried tomatoes in oil, slivered
1 tsp (5 mL) capers
2 artichoke hearts, marinated, chopped
to taste pepper, freshly ground
Directions
Beat eggs in a medium bowl. Stir in remaining ingredients. Spray a non stick medium skillet with cooking spray. Heat until hot. Pour egg mixture into skillet. Cover and cook over medium heat until eggs are set, 5 to 6 minutes. Sprinkle lightly with pepper. Slide onto a warm plate. Cut the frittata in wedges and serve.Makes: 1 to 2 servings.
