Mariachi Fajitas

Ingredients

2 eggs
1 tbsp (15 mL) water
1 tsp (5 mL) tex mex seasoning
cooking spray
1/2 red or green pepper, small, cut into strips
2 green onions, sliced (including green tops)
2 flour tortillas, large (8 inch / 20 cm), warmed
2 tbsp (30 mL) fat free sour cream
2 tbsp (30 mL) low fat cheddar cheese, shredded
2 tbsp (30 mL) chunky salsa

Directions

Beat eggs with water and seasoning. Set aside. Spray an 8 inch ( 20 cm non stick skillet with cooking spray. Heat skillet over medium heat. Saute peppers for 3 minutes. Add green onions and saute for 2 more minutes or until peppers are tender crisp. Wipe the skillet clean. Spray the same skillet with cooking spray. Heat skillet over medium heat. Pour in egg mixture. As mixture sets at the edges, with spatula, gently lift cooked portion to allow uncooked egg to flow underneath. Cook until bottom and top are set. Slide onto a warm plate. Cut omelette into 1/2 inch (1 cm) strips. Place an equal amount of omelette strips, peppers and green onions on two tortillas. Garnish with an equal amount of sour cream, cheese and salsa. Fold each side of the tortillas over filling and serve immediately.
