Mango Brie Dessert Quesadilla

Ingredients

2 eggs
1/4 tsp (1 mL) cinnamon
1/4 tsp (1 mL) sugar
1/2 tsp (2 mL) butter or margarine
1/4 cup (50 mL) chopped mango
1/2 cup (125 mL) brie, chopped into small pieces
2 large (9 inch / 22 cm) tortillas
raspberry drizzle

Directions

In a small bowl, beat eggs, cinnamon and sugar together until combined. Melt butter in a small skillet, add egg mixture and scramble until soft curds form.

Place one tortilla in quesadilla maker (or large frying pan on medium high heat). Evenly cover with egg mixture, starting from the centre and making sure to leave edges clear for sealing. Sprinkle with mango and brie. Cover with second tortilla and close quesadilla maker lid. Cook for 3 to 4 minutes until golden brown. If using a frying pan, cover for 2 to 3 minutes or until quesadilla is set, then flip over and cook for another 1 to 2 minutes.

Remove from quesadilla maker. Cut into six pieces. Place two pieces on each plate and garnish by drizzling raspberry sauce over top

Let cool slightly and serve.
