Impossible Vegetable Pie

Ingredients
2 cups (500 mL) broccoli, chopped cooked or frozen chopped broccoli, thawed & drained1 cup (250 mL) corn kernels, frozen or canned
1/2 cup (125 mL) onion, finely chopped
1 cup (250 mL) cheddar or swiss cheese, shredded
3 eggs
1 cup (250 mL) milk
1/2 cup (125 mL) biscuit baking mix
1/4 tsp (1 mL) salt
1/4 tsp (1 mL) pepper
Directions
In a lightly greased a 9 inch (23 cm) quiche dish or deep dish pie plate, evenly sprinkle broccoli, corn, onion and cheese. In a medium bowl, whisk eggs until blended. Add milk, baking mix, salt and pepper and whisk until thoroughly combined. Pour over broccoli mixture. Bake in a preheated 190° C (375° F) oven for 30 to 35 minutes or until a knife inserted near the centre comes out clean. Let stand for 5 minutes before serving.Makes: 3 servings
