Greek Spinach Tarts

Ingredients

4 eggs
1/2 cup (125 mL) plain yogurt
1/2 cup (125 mL) milk
1/2 tsp (2 mL) salt
1/4 tsp (1 mL) dry mustard
1/2 tsp (2 mL) tarragon
dash ground nutmeg
10 oz (300 g) spinach, chopped, cooked and drained
1/2 cup (125 mL) feta cheese, crumbled
18 medium pastry lined tart tins

Directions

Preheat oven to 190oC (375 oF). In a bowl, beat eggs until blended and mix in yogurt, milk, salt, mustard, tarragon, nutmeg, spinach and feta. Spoon into pastry lined tart tins. Bake tarts for 25 minutes, until set.
