Gingerbread Men

Ingredients


1 cup (250 mL) unsalted butter 
1 cup (250 mL) granulated sugar
2 eggs
1 1/4 cups (300 mL) unsulphured molasses
5 1.2 cups (1.225L) pastry flour
3 tsp (15 mL)  fresh ginger, grated
1 tsp (5 mL) baking soda 
1 tsp (5 mL) salt
2 tsp (10 mL)  ground cloves 10 mL cinnamon 2 tsp

Directions

In a medium bowl, whisk flour, spices, baking soda, and salt. In a large metal bowl, mix together butter with sugar until blended. Beat in eggs. Transfer chocolate mixture to a medium bowl. With a wooden spoon, gradually mix flour mixture into wet ingredients until well combined. Cover with plastic wrap and refrigerate for 2 to 3 three hours before rolling out. Preheat oven to 160° C (325° F). On a lightly floured surface, roll out dough to 1/4” thick. Use cookie cutters to cut out desired shapes and place on a lightly greased cookie sheet leaving at least 1 inch (2.5 cm) between cookies. Bake for 18 to 20 minutes or until darkened.
