French Toast with Cheese

Ingredients
8 slices french bread, about 1/2 inch (1 cm) thick, preferably stale4 oz (125 g) cream cheese, softened
1/2 cup (125 mL) raspberry jam
4 eggs
1/2 cup (125 mL) milk
1/2 tsp (2 mL) vanilla extract
1 tbsp (15 mL) vegetable oil
icing sugar
Directions
Spread cream cheese evenly on 4 slices of bread. Spread jam over cheese. Top with remaining slices of bread. Beat together eggs, milk and vanilla in a shallow dish just large enough to hold the four sandwiches. Place sandwiches in dish and soak each side with egg mixture. In a non stick skillet, heat oil over medium low heat. Fry sandwiches until golden brown, 2-1/2 to 3 minutes per side. Sprinkle with icing sugar and serve.Makes: 4 servings.Preparation: 10 minutes
