French Toast Fingers

Ingredients

4 eggs
2 tbsp (30 mL) orange juice
1/2 tsp (2 mL) grated orange rind
1/4 tsp (1 mL) salt
1/2 cup (125 mL) strawberry jam
4 thick slices day old sandwich white bread
4 thick slices day old sandwich whole wheat bread
cooking spray
icing sugar (optional)
maple syrup (optional)

Directions

Whisk eggs, orange juice, orange rind and salt in a small bowl and set aside. Spread 2 tbsp (30 mL) jam on each slice of white bread and place whole wheat bread slices on top. Trim crusts and cut each sandwich into three even strips.

Dip both sides in egg mixture until all egg mixture is absorbed. Spray a griddle or a large non stick skillet with cooking spray. Heat over medium heat.

Cook bread strips for 2 minutes on each side or until golden brown. Dust with icing sugar, if desired. Serve with a small bowl of maple syrup for dipping.
