Egg Salad Tex Mex Wrap

Ingredients

8 eggs, hard cooked
1/3 cup (75 mL) mayonnaise, light
1 tsp (5 mL) lime juice
2 tbsp (30 mL) green pepper, finely diced
2 tbsp (30 mL) red pepper, finely diced
1 tsp (5 mL) jalapeno pepper, finely diced
2 tbsp (30 mL) radishes, finely diced
to taste salt and pepper
4 whole wheat tortillas
1/2 cup (125 mL) lettuce, shredded
4 slices red onion, thin
4 sprigs coriander, fresh

Directions

Mash eggs with mayonnaise to desired texture. Add lime juice, peppers, radishes, salt and pepper. Spoon egg filling into middle of each tortilla; add lettuce, onion and coriander. Fold lower third of the tortilla over egg mixture and fold the two opposite sides over the centre to form a pocket.
