Egg in a Bread Basket

Ingredients

1 slice whole wheat bread
2 tbsp (30 mL) butter
1 tbsp (15 mL) salsa
1 egg
2 tsp (10 mL) green onion, chopped
2 tsp (10 mL) green pepper, chopped
1 tbsp (15 mL) shredded monterey jack or mozzarella cheese

Directions

Trim crust from bread; discard or save crust for another use. Spread one side of bread with butter. Place butter side down in large custard cup or ramekin (about 1 cup/250 mL size). Spoon salsa onto bread. Crack egg on top. Sprinkle green onion, green pepper and cheese over top. Microwave on HIGH until yolk is cooked as desired, about 1 to 2 minutes.

1. smoked salmon or herb cream cheese, diced green onion, chopped fresh dill
2. chopped ham, swiss cheese
3. diced tomatoes, chopped fresh basil, diced green onion

Makes: 1 serving

Preparation: 3 minutes microwave
