Egg and Cheese Burgers (Company's Coming)

Ingredients

1 tbsp (15 mL) cooking oil
1 cup (250 mL) thinly sliced onion
2 tsp (10 mL) hard margarine (or butter)
4 large eggs
4 process cheddar cheese slices
4 kaiser rolls, split and toasted (buttered, optional)
2 tbsp (30 mL) barbeque sauce
1 - 2 medium tomato, thinly sliced
1 avocado, pitted and thinly sliced
1 tsp (5 mL) hot pepper sauce

Directions

Heat cooking oil in large non stick frying pan on medium. Add onion. Cook for 5 to 10 minutes, stirring often, until softened. Remove to small bowl, Set aside.

Melt margarine/butter in same frying pan. Break eggs into pan. Gently break yolks. Cook eggs on medium until set. Remove from heat.

Lay 1 cheese slice over each egg. Cover. Let stand until cheese is melted.

Spread barbecue sauce on bottom half of each kaiser roll. Top each with 1 egg.

Layer onion, tomato and avocado over eggs. Drizzle with pepper sauce. Cover each with top half of roll.
