Egg and Cheese Burgers

Ingredients

4 hard cooked eggs, peeled and finely chopped
1 green onion, finely chopped
6 stuffed olives, finely chopped
1/8 tsp (0.5 mL) dry mustard
to taste salt and cayenne pepper
3 tbsp (45 mL) mayonnaise
4 hamburger buns
4 lettuce leaves
to taste lemon or lime juice
2 tomatoes, sliced
4 slices brick or processed cheese

Directions

In a bowl, combine eggs, green onion, olives, dry mustard, salt and cayenne pepper. Stir in mayonnaise. Place a lettuce leaf on each bun. Spread egg mixture evenly over lettuce. Top with tomato slices and cheese. Cover with top of bun.
