Cinnamon Oatmeal Breakfast Pudding

Ingredients

2 cups (500 mL) water
1/4 tsp (1 mL) salt
4 eggs
1/4 cup (50 mL) 2% milk
1/2 tsp (2 mL) cinnamon
1/2 tsp (2mL) vanilla
1 1/4 cup (300 mL) quick cooking oats (not instant)
1 1/3 cups (325 mL) 2% milk
1/4 cup (50 mL) dried cranberries
4 tsp (20 mL) granulated sugar

Directions

Bring water and salt to boil in medium saucepan over high heat. Whisk together eggs,  1/4 cup (50 mL) milk, cinnamon and vanilla in medium bowl; stir into boiling water. Reduce heat to medium-low. Stir in oats. Simmer until desired consistency, about 5 to 6 minutes, stirring occasionally. Spoon into bowls; top each serving with milk, cranberries and sugar.
