Chunky Chocolate Meringue Nests

Ingredients

3 large egg whites
3/4 cup (175 mL) granulated sugar
1/8 tsp (1 mL) cream of tartar
3 tbsp (45 mL) unsweetened cocoa powder
1/2 tsp (2 mL) vanilla
6 oz (180 mL) dark chocolate
 

Directions

Preheat oven to  375° F (190° C). 

In a large metal bowl, beat room temperature egg whites until soft peaks form.  Gradually beat in sugar, 1 tbsp (15 mL) at a time, until stiff peaks form.  Using a wooden spoon, stir in cocoa powder and vanilla.  Fold in chopped dark chocolate. 

Spoon mixture into the shape of small nests on to an ungreased cookie sheet covered in parchment paper.  Bake for 30 to 35 minutes until nests are dry.  Turn off oven and let sit over night inside the oven. 

Peel nests off of parchment paper.  Fill nests with whipping cream and top with berries or other fruit and sprinkle with chopped chocolate.
