Baked Alaska

Ingredients

1 jam filled jelly roll, white or chocolate
3 - 3 /12 inch (7.5 – 9 cm) diameter
5 egg whites, room temperature
1 tsp (5 mL) vanilla
1/4 tsp (1 mL) salt
3/4 cup (175 mL) sugar
8 scoops ice cream, any flavour

Directions

Cut jelly roll into eight, 1/2 inch (12 mm) thick slices. Arrange in a single layer on ungreased baking sheet.

Beat egg whites, vanilla and salt in medium bowl until soft peaks form. Add sugar, 1 tbsp (15 mL) at a time while beating, until sugar is dissolved.

Place 1 scoop of ice cream in the centre of each jelly roll slice. Working quickly, divide and spread meringue over ice cream to edge of jelly roll. Freeze. When ready to serve, bake on centre rack in 450 F(230 C) oven for about 2 minutes until meringue is golden.
Serve immediately.
