Arroz con Huevos

Ingredients

1 tbsp (15 mL) vegetable oil
3/4 cup (175 mL) chopped onion
3/4 cup (175 mL) chopped green pepper
1 clove garlic, minced
1 1/2 cups (375 mL) chopped tomatoes
3 cups (750 mL) cooked rice
to taste Hot pepper sauce
4 eggs

Directions

Heat oil in deep non-stick skillet or Dutch oven over medium heat. Add onion and green pepper; cook, stirring until onion is soft, about 6 minutes. Stir in garlic and tomatoes; cook 1 minute. Stir in cooked rice and hot pepper sauce; heat through. Poach or fry eggs in separate pan, to desired doneness. Spoon rice onto plate and top with eggs. Serve with hot pepper sauce, if desired.

Tip

For convenience, keep packages of ready-cooked rice on hand for quick preparation.
