Western Sandwich

Ingredients
10 mL (2 tsp) butter30 mL (2 tbsp) green pepper, minced
30 mL (2 tbsp) ham, minced
15 mL (1 tbsp) onion, minced
2 eggs
To taste salt and pepper
1 soft roll, medium
Directions
Melt butter in a small non-stick skillet over medium heat. Add green pepper, ham and onion. Cook stirring, about 3 minutes, until vegetables are tender and set aside.Whisk together eggs, salt and pepper. Pour mixture over vegetables in skillet. Cook over medium-high heat until eggs are set, about 2 minutes. Turn and cook other side about 1 minute. Transfer to the roll, folding in the edges. Serve immediately.
Makes: 1 serving.
