Western Sandwich

Ingredients

2 tsp (10 mL) butter
2 tbsp (30 mL) green pepper, minced
2 tbsp (30 mL) ham, minced
1 tbsp (15 mL) onion, minced
2 eggs
to taste salt and pepper
1 soft roll, medium

Directions

Melt butter in a small non stick skillet over medium heat. Add green pepper, ham and onion. Cook stirring, about 3 minutes, until vegetables are tender and set aside.

Whisk together eggs, salt and pepper. Pour mixture over vegetables in skillet. Cook over medium high heat until eggs are set, about 2 minutes. Turn and cook other side about 1 minute. Transfer to the roll, folding in the edges. Serve immediately.
