Almond Crunch Bars

Ingredients

Base:

1 cup (250 mL) unsalted butter
1 cup (250 mL) granulated sugar
1 large egg yolk
1 tsp (5 mL) vanilla
1/2 tsp (2 mL) almond extract
2 cups (500 mL) all purpose flour

Top:

1 large egg white
2 tbsp (30 mL) granulated sugar
1/2 tsp (2 mL) ground cinnamon
1/2 cup (125 mL) slivered almonds

Directions


Preheat oven to 350 F (180° C). In a medium bowl, beat softened butter, sugar and egg yolk together. Using a wooden spoon, stir in vanilla and almond extract. Gradually add flour and mix until well combined. Grease a 15 1/2 x 10 1/2 inch (40 x 26 cm) baking pan and pat dough evenly into pan. In a medium metal bowl, beat egg white until stiff peaks form. Gradually add in sugar. Using a wooden spoon, stir in cinnamon. Fold in slivered almonds. Spread evenly over top of base. Bake for 25 to 30 minutes. Let cool for 1 hour and then cut into squares of desired size.
