All-Occasion Savoury Quiche

Ingredients

1, 9 inch ( 23 cm ) unbaked pie shell
4 eggs
1 1/2 cups (375 mL) light cream (10%) or evaporated milk, undiluted
1/2 tsp (2 mL) salt
1/4 tsp (1 mL) pepper
1/2 - 1 tsp (2-5 mL) seasonings (see variations)
1 1/2 - 2 cups (375-500 mL) filling ingredients (see variations)

Directions

Preheat oven to 400° C (200° F). Partially bake pie shell on lowest rack in oven (8 minutes). Remove from oven and reduce heat to  (350° F (180° C). In a bowl, lightly beat eggs, then add cream, salt, pepper, and desired seasonings. Spread filling ingredients in partially baked shell. Pour in egg mixture. Bake 35 to 40 minutes. Let stand 5 to 10 minutes before serving.

Variations

Mushroom Quiche

1 cup (250 mL) sliced mushrooms (sauted), 1/2 cup (125 mL) shredded cheddar cheese, 1/2 tsp (2 mL) dried basil.

Shrimp Quiche

1 cup (250 mL) cooked shrimp or crabmeat, 3/4 cup (175 mL) shredded cheese, 1/4 cup (50 mL) chopped onion, 1/4 cup (50 mL) chopped green pepper,1 tsp ( 5 mL) dried tarragon.

Corn Quiche

1 cup (250 mL) fresh, canned (drained) or frozen (thawed) corn, 1/4 cup (50 mL) finely chopped onion, 1/2 tsp (2 mL) finely chopped parsley.
